    Artichoke & Garlic Spread for Cheesy Bread

    If you are a regular reader you know I have a love (that borders on obsession) of artichokes and basil and anything that contains either one. Put them both together and well, it's a match made in heaven. I have shared my artichoke bruschetta and my artichoke and basil lasagna in the past. Today it is my artichoke spread for cheesy bread or pizza!

    When we make homemade pizza, I always add artichoke hearts to mine. It is good, but I wanted to make it taste even more artichoke-y. That is where this concoction came from. It was born out of my undying love of artichokes and boredom one afternoon.

    Tell me I am not the only child who "invented" recipes. When I was 10 I was bound and determined to invent a brand new salad dressing. For days I blended things in my mom's blender that had no right to be mixed together. Needless to say I never came up with the next big thing in salad dressing. A part of that child is still in me and for once in my life, blending things up in the blender had a yummier outcome.

    Enough sauce for two large cheesy breads

    Ingredients

    • 12 ounce bottle of Marinated Artichoke Hearts
    • 1-2 cloves of Garlic (depending on their size) or 1 tablespoon of Minced Garlic
    • ¼ cup of grated Parmesan Cheese
    • 2 tablespoons Olive Oil
    • 5-6 Fresh Basil Leaves

    Instructions

    1. Blend all of the ingredients together in a blender until smooth.

    This makes enough sauce fo either two batches of cheesy bread or a cheesy bread and a pizza. I feed five guys at my house so I opt for the 12 ounce bottle. If you need to make less, use the 6 ounce bottle of marinated hearts and reduce the other ingredients by half.

    My favorite brands for marinated artichoke hearts (don't buy the canned plain hearts) are Napoleon and Reese.

    Like I sad, I made this to go on pizza, but one day decided to put it on cheesy bread sticks. It was a HUGE hit with the kids. They like it better than regular garlic spread. We may have had it with dinner three different times last week....

    I always add feta before topping it with mozzarella.

      I'm obsessed with artichokes too. Garlic is pretty high on my list too. I try to always have a jar of marinated artichokes on hand and love the on pizza or by themselves as a snack. I can't wait to try this spread. Pinning.
