Today I am going to share with you my FAVORITE recipe in the whole universe! I literally could eat the whole thing by myself. I may or may not have made a batch and ate it for breakfast, lunch and dinner one day. Okay, I may have done that more than once…..
I kind of made this recipe up. I added a bunch of my favorite things together and threw it on some toast. If you like artichokes, you will DIE.
I make this ALL the time in the summer when my garden is in full swing. But I also make it in the winter. I could make it every day and be happy.
8-10 Roma tomatoes, diced
1-2 red peppers, chopped finely
2-3 tablespoons of chopped fresh basil
1 tablespoon chopped fresh oregano
2 tablespoons of olive oil (I don’t really measure. I just drizzle it over the top before baking)
8 ounces Mozzarella cheese, cubed
2 (12 ounce) jars of MARINATED artichoke hearts, chopped ( I grow artichokes so in the summer I steam the hearts and then just add a little white vinegar or rice vinegar to imitate the marinated hearts) I also add a little of the liquid from the jar to the mixture because I love the vinegar flavor.
Not all marinated artichoke hearts are created equal. I have tried a couple brands that tasted metallic even though they were in a glass jar. I like Napoleon brand and Delallo.
I guess technically you could eat it with out cooking it. I am not a fan of uncooked tomatoes. I know, I am weird. So I bake it at 375 degrees for about 30 minutes. It helps all the flavor marry together. I serve it toasted bread. When I serve it to guests I have it on cute baguette bread. But secretly in my house I load as much as I can on a thick slice of regular bread. Homemade bread it the BEST.
