    Simple Cream of Broccoli Soup

    Just like the Chicken Pot Pie I recently posted, this is a recipe that I first made in college. I got something in the mail with recipes printed on it and decided to give them a try. One was for Cream of Broccoli Soup. I have modified it over the years to fit my taste and to simplify it. It is a family favorite even if my husband doesn't consider soup a "real meal". Men.....

    Simple Cream of Broccoli Soup

    Ingredients

    • 1 stick of butter (½ cup)
    • 1 medium onion
    • ¼ cup flour
    • milk
    • 1 ½ teapsoons chicken broth granules
    • 2 cans cream of celery soup
    • 1 head of broccoli or 16 ounces of frozen brocoli

    Instructions

    1. Melt 1 stick of butter in a large pan. Finely chop 1 medium onion. Saute the onion in the butter until the onions are clear. Do not let the butter burn.
    2. Once the onions are sauteed, add about ¼ cup of flour. Whisk it into the butter and onion mixture until mixed. More flour will make it thicker, less flour will make it thinner.
    3. Add milk while whisking. I don’t measure. I just pour slowly and add enough to make it the thickness I want. I use skim milk or 1% milk. Keep in mind that when you add milk, it cools the mixture and when it heats back up it will become thicker. So pour in some milk and whisk while you wait for it to heat back up and get thick, then add more milk and repeat as needed.
    4. I then add two cans of cream of celery soup and 1 ½ teaspoons of chicken broth granules. If you don’t have granules you can either put a cube in a cup of water and heat it in the microwave, or use a can of broth and add less milk to compensate. Sometimes I need to add a little more milk at this point. It depends on how much milk you added before and your thickness preference.
    5. I then add the chopped broccoli. Most of the time I buy chopped frozen broccoli and it works great. I pull it out of the freezer before I get started so it can thaw. I cover the pot with a lid so it can simmer on low – medium. This allows the broccoli to cook.

    You can serve it with grated cheese on top if you like. We usually just eat it as is with rolls or homemade bread :)

    Fall and winter are the perfect time to make soups. I have several more favorites I will share over the next little while. What is your favorite kind of soup???

      My husband doesn't consider soup a real meal unless one of the main components is meat (like chicken noodle soup). This looks delicious but I'd probably have to add bacon or sausage. Thanks for the recipe!
