I love working in the kitchen with my boys. These "tarts" are so easy that my boys can help make them. And they are perfect for summer!
All I did was use a sugar cookie recipe and then pressed the dough into lightly greased muffin pans and then baked them for the regular cookie time. This creates the little cups that you can then fill.
I used the Betty Crocker recipe and it was fine, but it puffed up and didn't hold its shape as well as I had hope. I am not the best baker so it could have been an error on my part.

After you have your cookie cups, you can fill them with pudding or custard. I chose a vanilla but lemon would be yummy too! Then top if off with fresh fruit.
My boys thought they were all fancy making and eating these. We just made them for family night but I think I will make them next time I am assigned a dessert for a get together :)

Looks yummy. I am the sole fruit-eater here. So often I just don't because I do what they like. Maybe I'll remember to make an exception.

Ooh, I never thought of pudding. I have a "rosette" iron that makes little frilled cups that I used to put creamed veggies in when my daughter was younger. I'll bet I could adapt your idea and resurrect that iron to make some tartlets!
