I love working in the kitchen with my boys. These "tarts" are so easy that my boys can help make them. And they are perfect for summer!
All I did was use a sugar cookie recipe and then pressed the dough into lightly greased muffin pans and then baked them for the regular cookie time. This creates the little cups that you can then fill.
I used the Betty Crocker recipe and it was fine, but it puffed up and didn't hold its shape as well as I had hope. I am not the best baker so it could have been an error on my part.
I polled you on Facebook about your favorite sugar cookie recipes that hold their shape and here are some of them:
The Sweet Adventures of Sugarbelle
After you have your cookie cups, you can fill them with pudding or custard. I chose a vanilla but lemon would be yummy too! Then top if off with fresh fruit.
My boys thought they were all fancy making and eating these. We just made them for family night but I think I will make them next time I am assigned a dessert for a get together :)

You could fill those sugar-cookie crusts with all kinds of fillings! What a cool idea for a fancy treat!

Wow! These look beautiful and delicious! I think this is something I can do with my daughters over the summer -- I will put it on our summer vacation "to do" space!

Every sugar cookie recipe I use always kinda melts into a lump. Which of the ones you listed worked the best?
Stacy
Those listed are ones my readers on Facebook recommended and I have not tried them yet. But here is a post I found about how to correct problems. http://iambaker.net/sugar-cookie-troubleshooting-sugar-cookie-recipe/

psst....! just make sure you use a sugar cookie recipe that is meant to be rolled out and (here's the big one) get it cold before you bake it! ;)

Looks yummy. I am the sole fruit-eater here. So often I just don't because I do what they like. Maybe I'll remember to make an exception.

Ooh, I never thought of pudding. I have a "rosette" iron that makes little frilled cups that I used to put creamed veggies in when my daughter was younger. I'll bet I could adapt your idea and resurrect that iron to make some tartlets!

These look so fresh and delicious...and they seem much simpler to make than I would have imagined. I'm looking forward to trying them with some lemon! Pinning so I don't forget :)

These look delicious and easy to make. They would be perfect for my upcoming calendar tea that is Alice in Wonderland themed. Thanks so much!
