Confession.... I felt off the healthy wagon while in New Orleans. Shane and I went there for a service project with Home Depot (more on that later!) and we did a pretty good job for the first two meals but them when we ate out for dinner all four nights. We wanted to experience the authentic food in all its deep fat fried, cheesy glory. And it was fantastic!
And in keeping with the full disclosure, I have not been very good since coming home. I have been stress eating. Swedish Fish to be exact. When you go on vacation, there are no magical fairies getting your work done while you are gone. It piles up. Weird, I know.
But I vow to do better starting with these kabobs I grilled for dinner. Have you ever made kabobs?
They are a favorite of ours. I grew up making them with my family but Shane had never had them before meeting me. We chunk up what we have in the fridge such as onions, peppers, mushrooms, squash, zucchini, tomatoes, pineapple, chicken and beef. I usually buy the stew meat because it is already cut into the perfect sized pieces.
I soak my skewers in water before adding the food to them . I'm not sure if that is a real thing that you are suppose to do, but it makes me feel better about putting wood sticks on the hot grill.
I like BBQ sauce on mine but lemon or lime juice with pepper is also really good.
What are some other thing you have added to your kabobs? I think we will be making these more often now that it is grilling season and I would love some variations :)

I put my vegetables into a huge ziplock back and pour Good Season's italian dressing over top and allow to marinate all day. If I don't have that, I pour olive oil, sea salt and italian spices over everything and get the same scrumptious results. I never thought of using BBQ sauce before! I wonder if hot wings sauce would be delicious too :)

I know it's not as pretty, but if you put each kind of food on its own skewer- like all the chicken on one skewer all the mushrooms and another skewer-it may not look Pinterest pretty, but if it looks the same it cooks the same. Then when you're ready to eat them you can line all the skewers up on a platter for presentation, and then use a fork remove all the food and place it in cute piles. Garnish with fresh herbs - everything is cooked the correct amounts you don't have to wait and cook your onions to a very high degree when your chicken needs to be done. Easy.
This is great not only for the food cooking evenly, but for kids who may not love all the things on the kabobs! I'll have to try this :)
We love teriyaki sauce on ours, with a little brown rice on the side. This post has made my mouth water! All of your chopped vegies look so pretty. Kabobs are now on next weeks menu!!
I never even thought of doing rice! That seems like a no brainer. I'm totally doing teriyaki next time.
Mix cumin and brown sugar, add coriander if you want, and sprinkle on. I love this mixture on kabobs or roasted veggies in the oven. I may be a little bit in love with cumin.
