S'mores are a summer time favorite at our house. Whether we make them while camping in the mountains or over our firepit in the back yard, the melted chocolate, gooey marshmallow, and crisp graham crackers are a classic treat we enjoy each year. One year I figured out how to make homemade graham crackers and it was a BIG hit! They are so yummy! They are easy to make and it would be a fun activity to do with your kids.
Homemade Graham Crackers for S'mores
Having a small house means that any "entertaining" we do is usually outside. BBQ's, outdoor movies, and roasting marshmallows are the usual. Is there anything better than sitting around a fire with your family? Several years ago my sister-in-law requested a camping type cake for her my niece and I came up with a giant s'more cake. I created a recipe for homemade graham crackers that taste better than the real thing. I made the same recipe but but made regular sizes crackers for s'mores. The golden brown, buttery crackers are just sweet enough for the perfect s'more and are the absolute best graham crackers!
Graham Cracker Recipe
Ingredients
- 2 sticks of room temperature butter
- 1 cup brown sugar
- ½ cup dark corn syrup
- 1 Teaspoon vanilla extract
- 4 cups all purpose flour
- 4 tablespoons water
Instructions
- Cream the softened butter, brown sugar, vanilla, and corn syrup together in a medium bowl with either a hand mixer or a stand mixer.
- After the wet ingredients are creamed, add the dry ingredients and mix thoroughly.
- Once the dough is all mixed together chill for 30-60 minutes.
- Roll out like sugar cookie dough with a rolling pin on parchment paper or a silicone mat. Use a rectangle or square cookie cutter. If you don't have a cookie cutter, you could use a knife or pizza cutter to cut the dough.
- Place onto a lightly greased cookie sheet and/or silicone mat.
- Bake at 375 for 8 minutes. The thinner you roll them the crispier they will be.
- When they have cooled, you can remove from the baking sheet and enjoy!
*Optional: Right after you take them out and they are still warm you can use a toothpick or kabob stick to poke holes so they look like the real thing.
I like that they get rounded edges but if you want them to have nice, crisp lines like the real deal, you can cut the edges with a sharp knife while they are still warm. You can use the parts you cut off in milkshakes, as a graham cracker crust, or other desserts that call for graham cracker crumbs.
How long will the dough last?
Any leftover dough can be stored in an airtight container for a few days in the refrigerator or you can freeze until the next time you want to make homemade graham crackers.
Can I substitute coconut oil for the butter?
I have never tried it this way, but if you do, add the same amount of oil as you would have for the butter (1:1 ratio). It will affect the flavor some. You could add butter extract flavoring to try and offset the difference.
Could I use whole wheat flour instead?
Yes, you can. You can also use graham flour (a courser flour). I use all purpose because I like the flavor better and because I always have it on hand.
You can use these to make classic s'mores with toasted marshmallows and milk chocolate bars, or make your own creation! You could use dark chocolate, a peanut butter cup, or some other type of chocolate candy. However you like to make them, campfire s'more are a wonderful summertime treat!
Now that I have made homemade crackers, I kind of want to try my hand at homemade marshmallows! I wonder if they roast as well as store bought. Let me know of you have made them and what your thoughts are on them and if you have a favorite recipe.
What are you looking forward to doing this summer?

I must say, your homemade graham crackers recipe for s'mores has left my mouth watering! The thought of creating these golden-brown, buttery delights for our next outdoor gathering has me feeling so excited. I can just imagine the joy on my family's faces as they indulge in these scrumptious treats.
Your step-by-step instructions are clear and easy to follow, making this recipe seem approachable even for someone like me, who isn't an expert in the kitchen. I love the idea of using a cookie cutter or a knife to shape the crackers, and the tip about poking holes with a toothpick to give them that authentic look is just brilliant.
The versatility of this recipe is fantastic, and I can't wait to experiment with different chocolate varieties and toppings to create our own unique s'more combinations. The fact that the leftover dough can be stored and used later is an added bonus, and I'm already envisioning other delicious desserts using the graham cracker crumbs.
Thank you for sharing such a delightful and mouthwatering recipe with us. Your love for outdoor gatherings and s'mores shines through, and I can't wait to surprise my family with these homemade graham crackers for our next campfire evening. Cheers to making wonderful summer memories with your delectable creations!
