Confession…. I felt off the healthy wagon while in New Orleans. Shane and I went there for a service project with Home Depot (more on that later!) and we did a pretty good job for the first two meals but them when we ate out for dinner all four nights. We wanted to experience the authentic food in all its deep fat fried, cheesy glory. And it was fantastic!
And in keeping with the full disclosure, I have not been very good since coming home. I have been stress eating. Swedish Fish to be exact. When you go on vacation, there are no magical fairies getting your work done while you are gone. It piles up. Weird, I know.
But I vow to do better starting with these kabobs I grilled for dinner. Have you ever made kabobs?
They are a favorite of ours. I grew up making them with my family but Shane had never had them before meeting me. We chunk up what we have in the fridge such as onions, peppers, mushrooms, squash, zucchini, tomatoes, pineapple, chicken and beef. I usually buy the stew meat because it is already cut into the perfect sized pieces.
I soak my skewers in water before adding the food to them . I’m not sure if that is a real thing that you are suppose to do, but it makes me feel better about putting wood sticks on the hot grill.
I like BBQ sauce on mine but lemon or lime juice with pepper is also really good.
What are some other thing you have added to your kabobs? I think we will be making these more often now that it is grilling season and I would love some variations :)
