Just like the Chicken Pot Pie I recently posted, this is a recipe that I first made in college. I got something in the mail with recipes printed on it and decided to give them a try. One was for Cream of Broccoli Soup. I have modified it over the years to fit my taste and to simplify it. It is a family favorite even if my husband doesn’t consider soup a “real meal”.
This is hands down my kids’ favorite dinner that I make. When asked to fill out a “get to know you” form at school each year, for favorite food they ALWAYS put “chicken pot pie” or “my mom’s chicken pot pie”. And every time it is on of their birthdays, they pick chicken pot pie for their birthday dinner.
Now I like it and all, but I do not quite understand their obsession with it. But I humor them and make it a lot. I made it the other night when it was the first day of school. That is pretty momentous and called for their favorite dish.
I have been looking for healthier versions of creamies and popsicles. In the last several months we have become fans of plain Greek yogurt. We use it as a sour cream substitute, in smoothies, and with fruit and granola.
I came up with another way to use it the other day. We made Blueberry Creamies :)
